Meal Plan Monday!

I know there are a few blogs around that do Meal Plans on Monday, I'm going to start posting mine here as well. I've never been one to Meal Plan but in the last 4 weeks I have to admit I don't think about supper until about 3pm - so we end up eating crap.

To survive with two kids, and still live a healthy life, organization and planning is a must. And by writing those plans down it really helps a person stick with them. I wont be doing any grocery shopping throughout this week, I usually grocery shop every two weeks, and pick up a few things here and there, but since I'm still playing catch up with bills because of an unorganized Christmas, there wont be much for extras for the next little bit.

So this week I have to use what I have in the fridge/freezer and cupboards.

Monday Lunch - Grilled Cheese Sandwiches & a pickle
Supper - Ham, Mashed Potatoes & Veggies

Tuesday Lunch - Ham Sandwich & Cream Soup
Supper - Spaghetti (meatless)

Wednesday Lunch - KFC (Ben's in school for lunch)
Supper - Corn Chowder (with left over ham from Monday) (Ham, Cream Corn, Kernel corn, potatoes, onion, garlic)

Thursday Lunch - Tuna Sandwiches & Corn Chowder
Supper - Pork Loin Chops, Rice, Veggies

Friday Lunch - Corn Chowder (Ben's in school for lunch)
Supper - Roasted Chicken, Baked Potatoes, Broccoli

Saturday Lunch - Chicken Salad Sandwiches (leftover from Friday Supper)
Supper - Taco's & Burritos (ground beef, left over chicken, lettuce, tomato, sour cream, cheese, salsa)

Sunday Lunch - Hard Boiled Eggs, Bacon & Fried Potatoes with onion, garlic & parsley
Supper - Chicken Nuggets, French Fries, Veggies

Snacks for the week will include Apples & Oranges. We'll be using up our left over Holiday Colored Kellogg's Rice Krispies to make Rice Krispie treats (YUM), and we'll probably make some Banana Muffins with the few frozen Banana's that are in my freezer.

Meal planning is definitely a headache especially if you are busy with work and kids (this coming from a stay-at-home work-at-home, dad. You might want to check out Kitchen Monki's meal planner and calender. Super easy to use!

Meal planning is a drag! But your meals look fabulous! If my kids like pickles...total winner. We absolutely avoid fast food but eat pretty healthy, like tonight was chef salad night and surprisingly everyone ate for dinner being put together @ 3pm too! I know the feeling.
